Classic Tomato Sauce with Oregano
Ingredients
- 2 tbsp olive oil
- 3–4 garlic cloves, minced
- 1 can (28 oz) crushed tomatoes
- 1–1 1/2 tsp dried oregano (or 1 tbsp fresh)
- Salt and pepper
- Optional: pinch of sugar, red pepper flakes
Make it
Warm the olive oil over medium heat and sauté the garlic 30–60 seconds until fragrant.
Add the tomatoes and stir.
Add the oregano, salt, and pepper.
Simmer uncovered 20–30 minutes, stirring now and then. Taste and adjust.
Greek Salad (Horiatiki)
Ingredients
- Tomatoes, chunked
- Cucumber, sliced
- Red onion, thinly sliced
- Kalamata olives
- Feta cheese
- Olive oil
- 1/2–1 tsp dried oregano
- Salt
Make it
Combine the vegetables and olives in a bowl.
Drizzle with olive oil and sprinkle with oregano and salt.
Top with a slab of feta (don’t mix it in) and serve.
