Scallion Ginger Sauce
Ingredients
- 1/2 cup bunching onions, finely sliced
- 1 tbsp fresh ginger, grated
- 1/4 cup neutral oil
- Pinch of salt
Make it
Mix the sliced greens, ginger, and salt in a heatproof bowl.
Heat the oil until shimmering, then carefully pour it over the mixture (it will sizzle).
Stir and spoon over rice, chicken, fish, or noodles.
Scallion Scrambled Eggs
Ingredients
- 3 eggs
- 3 tbsp bunching onions, sliced
- Splash of milk
- Salt
- Butter for the pan
Make it
Beat the eggs with a splash of milk and a pinch of salt.
Melt butter in a pan over medium-low heat and add most of the sliced greens.
Pour in the eggs and stir gently until just set; finish with the remaining greens on top.
