Recipes:
1) Lemon Thyme Roasted Chicken

Time: ~1 hour | Why people love it: simple, smells incredible, always works

Ingredients

  • 1 whole chicken (or bone-in thighs)
  • 2 tbsp olive oil
  • 1 lemon (halved)
  • 4–6 fresh thyme sprigs (or 1½ tsp dried)
  • 3–4 garlic cloves (smashed)
  • Salt & pepper

Steps

  1. Preheat oven to 425°F.
  2. Pat chicken dry with paper towels.
  3. Season generously with salt and pepper (inside and out).
  4. Stuff cavity with lemon halves, garlic, and thyme sprigs.
  5. Rub outside with olive oil.
  6. Roast breast-side up for 50–60 minutes (165°F internal).
  7. Rest 10 minutes, then carve and serve.

2) Crispy Roasted Potatoes with Thyme

Time: 40–45 minutes | Perfect side dish

Ingredients

  • 1½–2 lb potatoes (quartered)
  • 2–3 tbsp olive oil
  • 1½ tsp fresh thyme (or 1 tsp dried)
  • 2 garlic cloves (optional)
  • Salt & pepper

Steps

  1. Preheat oven to 425°F.
  2. Toss potatoes with olive oil, salt, pepper, thyme, and garlic.
  3. Spread evenly on a baking sheet (cut side down).
  4. Roast 25 minutes, flip.
  5. Roast another 15–20 minutes until golden and crispy.
  6. Finish with extra thyme if desired.

3) Garlic Thyme Butter Steak

Ingredients

  • Steak (ribeye, NY strip, or sirloin)
  • Salt & pepper
  • 2 tbsp butter
  • 2 garlic cloves (smashed)
  • 2–3 thyme sprigs

Steps

  1. Season steak generously with salt and pepper.
  2. Heat skillet over high heat until very hot.
  3. Sear steak 3–4 minutes per side.
  4. Add butter, garlic, and thyme to the pan.
  5. Tilt pan and spoon melted butter over steak for 1–2 minutes.
  6. Rest steak 5 minutes before slicing.
